Our Client:
We are recruiting on behalf of a respected, high-end butchery based in Huyton, Liverpool, supplying premium meat products to the catering and hospitality industry — including top restaurants, hotels, and executive chefs. This is a specialist operation focused on quality, consistency, and bespoke customer service — not a retail/high street role.
About The Role:
As an Experienced Butcher, you will work as part of a skilled team preparing a wide range of meat products to exacting standards. This includes breaking down whole carcasses and crafting premium cuts tailored to client specifications. You will work to tight deadlines in a high-volume environment, ensuring outstanding quality and food safety at all times.
Key Responsibilities:
- Prepare bespoke meat cuts from whole carcasses (beef, lamb, pork, poultry)
- Maintain high standards of hygiene and safety (HACCP compliance)
- Meet specific chef and commercial kitchen requirements accurately and efficiently
- Minimise waste while managing portion control and yields
- Support smooth daily operations including stock rotation and prep schedules
- Collaborate with internal teams to ensure timely and correct order fulfilment
What We Need from You:
- 5–7 years of professional butchery experience (preferably in catering or hospitality supply)
- Proven knife skills and carcass breakdown expertise
- The ideal candidate will have a background working in a meat plant environment.
- Strong understanding of meat quality, handling, and presentation
- Ability to work quickly, cleanly, and accurately under pressure
- Good communication and teamwork skills
- Flexibility to work early starts and Saturday mornings
Preferred Qualifications:
- Food Safety Level 1 or 2 (desirable)
- HACCP Certification (desirable)
- NVQ Level 2 or 3 in Butchery (Preferred but not essential)
- Experience with dry-aged meats, game, or speciality cuts (a plus)
- Own transport essential due to the start times and location
